
Getting That Perfect Crunch: The Secret of Halogen IR
Everyone wants that gold standard: a crust that snaps and a center that stays soft. But if you’re baking at scale, you can’t just hope for the best. Relying on hot air alone takes too long. That’s why we use shortwave halogen infrared lamps. Instead of waiting for the oven air to warm up, these lamps shoot heat straight into the food. It’s immediate. How it actually works Think of it less like a heater and more like sunlight on a cold day. These shortwave rays don’t just sit on the surface; they dive deep into the dough. They get the water and fats inside vibrating, which heats the center fast. At the same time, the intense heat on the outside triggers that beautiful browning (the Maillard reaction). You get a sear and a fully cooked middle without the wait. The gear behind the heat We make these lamps out of high-purity quartz glass. We use a halogen cycle to stop the tungsten filament from evaporating and clouding up the tube. Why does that matter? Because your lamps stay clear. They keep putting out the same amount of heat for thousands of hours without dipping in performance. Depending on how much space you have in your oven, we can tweak the length and wattage. If you need to move your product through the line faster, we just bump up the wattage per millimeter to give you more heat density. Getting it set up Fitting these into your line is pretty painless. Most of our lamps use standard R7s or SK15 connectors, so they usually just slide right into most industrial rigs. You can hook them up to a PID controller if you need to be precise about how the temperature ramps up. But a word of caution: shortwave IR is powerful.Really powerful. If your voltage is too high or the lamp is sitting too close to the bread, you’ll char the crust before the inside is even warm. You’ve got to find the sweet spot between your conveyor speed and the lamp height. And one last thing—if you’re running these at full blast, make sure your housing is vented. You don’t want all that radiant heat warping your oven chassis.
