
Stop Letting Your Pizza Oven Lose Its Cool
If you’ve ever run a high-output pizza oven, you know the struggle. Every time you slide in a cold tray or swing the door open, the heat just… vanishes. It’s frustrating. One minute you’re at the perfect temp, and the next, your crust is fighting an uphill battle because the ambient heat took a dive. To fix this, we use 1500W infrared (IR) tubes tied into a real-time compensation loop. Why 1500W? It comes down to heat density. Most ovens rely on convection—basically moving hot air around—which takes forever. IR is different. It hits the food surface directly. Because we use quartz envelopes, the heat radiates in a short-wave spectrum. In plain English? It sinks into the dough faster. Instead of waiting minutes for the oven to recover, it happens in seconds. Fixing the “Sawtooth” Problem Standard thermostats are honestly too slow for this kind of work. They wait for the oven to actually get cold before they kick back in. This creates a “sawtooth” effect where your temperature is constantly spiking and crashing. We don’t do that. We use a PID-based control system that watches the temperature every single millisecond. The moment the sensor feels a dip, the system pumps more current into those 1500W tubes. It catches the drop before the temperature even has a chance to crash. It’s a much smoother ride for your pizza. A Few Things to Watch Out For These tubes work great with most industrial controllers, and since they have a lean footprint, you get more actual cooking space inside the chamber. But here is the catch: these things put out an intense amount of localized heat. If your oven’s shell isn’t insulated properly, you’re just leaking expensive heat through the walls. When that happens, your tubes have to run at 100% just to keep up with the draft. That’s a fast track to burning out your filaments. Double-check your insulation. Make sure your hardware isn’t working overtime just because the oven box is leaky.
